Monday Weigh-in 256

Weighed myself Monday 256 pounds. Proud to say I haven't cheated since the last debacle. Disappointed I only lost 4 pounds last week, but happy I'm losing again. My main focus will be getting myself back in ketosis. I've had a heck of a time since New Years.

There's really not a lot to say. I've been staying keto in my diet, working my way up to another water fast or bone broth fast. I'll post some updates soon.

An Experiment In Cheating

260 pounds

I guess I forgot to post the results of my bone broth fast here. I weighed myself Saturday and after 4 days of strictly bone broth fasting, I discovered I had gained 2 pounds. I really should have weighed myself Monday morning to see how much I gained after my super bowl cheat weekend. I didn't, so I don't really have a gauge as to how much weight I put on over those 2 days of cheating.

I need to start blogging daily too, so I have an accurate record of what's happening with my diet. For some reason, I'm confused about the weigh-ins on here. For a moment I was down to 252 pounds, now I'm back to 260.

So, back to the bone broth fast. I was a little disgusted after discovering I had gained 2 pounds after 4 days of strictly bone broth only. I decided to repeat what I did last weekend over this weekend on a smaller scale, to see how much weight a 2-day cheat can add. To my shock, 2 days of eating carbohydrates, sugar, and drinking beer and alcohol added 8 pounds. Over Super Bowl weekend I was much more excessive with my cheating. I ate pizza, drank a lot of beer and whiskey, and even consumed a few sodas.

The bottom line is I can't and won't cheat anymore until I hit my desired weight. I need to drop 60 pounds. I dropped close to 50 pounds between October and December. With hard work and dedication, I'd like to be around the 200-pound range by July.

Going On My Third Day, Bone Broth Fast

Third day on the chicken bone broth fast and I feel great! This is the first time I've fasted this long on strictly bone broth and I'll probably do this more often.

I haven't had any serious hunger issues yet. I've done fasts in the past and by the third day I usually feel lightheaded, that's not happening this time. No headache!

My understanding is that fasting headaches are usually caused by a lack of electrolytes in the body. By using the bone broth I'm guessing there are enough salts and electrolytes to keep a headache away! 

At this point, I'm just going to keep going. No matter what, I'll break fast Sunday. It's my mother's birthday and I'll be having a birthday dinner with her. I'm hoping I'll be in ketosis by Saturday.

I use a really simple bone broth recipe. I'll try to make sure and post it in the next day or so. 

3 Days on the bone broth fast and all is going good!

Cheated & Now Fasting

I cheated over the weekend for the Super Bowl. I decided to enjoy myself over the weekend. Saturday afternoon I went off Keto and ate a pastry with a coffee. Sunday I binged on cheese and crackers, pizza, and carbohydrate-filled potato chips!  Not to mention the beer and whiskey. With the exception of the chicken wings, none of this stuff was keto friendly!

Monday I woke up pretty hungover, and there's nothing better than a high carb breakfast to help ease a hangover. I opted for one more cheat day to really get everything out of my system. I had a nice breakfast complete with cinnamon rolls, sugar-filled flavored coffee, and all the buttered toast I could stomach.

Like I said in my previous post, there is no try on Keto. You either do or do not.
Monday evening I picked up some of my favorite sweets to snack on while watching T.V. and at midnight began fasting.

I got a rotisserie chicken for dinner Monday night, and while I watched TV and ate sugary snacks I prepared a bone broth for my fast. It's now been a little over 36 hours and I've had nothing but bone broth in my system.

My plan is to fast for as long as I can take it, or until my keto strips say I'm in ketosis. The only thing I'll be consuming is bottled water, and chicken bone broth. The last time I did this I was back in ketosis within 5 days.

I've also been jogging a mile to a mile and a half each day. I'm hoping that helps get me into ketosis a little quicker. My goal for February is to get down to the 230s by March.

To Cheat or Not To Cheat... That Is the Question!

It's been a few days since I've blogged. For the most part, things are going great. The weight continues to melt off. I've managed to stay keto since the beginning of January. I lost another 9 pounds this week. Current weight 253 lbs down from 262 last week and 272 when I started! I did an early Saturday morning weigh-in because tomorrow is Super Bowl Sunday and I'm thinking about cheating!

I've talked about a lot of the stuff I like about the Keto diet in previous posts. The food is great, I don't really count calories. For the most part, with a little creativity, it's easy enough to find Keto friendly foods on almost any restaurant menu. A perfect example is being out with friends and stopping at a fast food burger joint. Order a plain triple bacon cheeseburger, skip the fries, and coke, toss the bun, and you're eating Keto and probably nice and full when you're finished! For me, Keto can be extremely convenient.

One of the biggest downsides of the Keto diet is that you really can't cheat. If I may quote the brilliant wisdom of Master Yoda, "Do or do not, there is no try." Once you cheat and eat some high carbohydrate sugary foods, you knock yourself out of ketosis and you have to start all over again!

You can speed the process up with some hardcore fasting, but at the very least you're probably looking at around 5 - 10 days before you're in that state of ketosis again. That's what I strive for, a constant state of ketosis where my body is a fat burning machine. There really is no cheating. I'm either in ketosis or I'm not. When I'm not, I have only myself to blame.

Holiday's and special occasions are always a test. Super Bowl Sunday is a pretty big event in our house. I was planning on just enjoying the game with my father and preparing a bunch of Keto friendly snacks for myself, and maybe sipping a little vodka. I had a menu prepared of deviled eggs, pork rinds, chicken wings, and a nice assortment of nuts, pickles, various cheeses, and olives. For the most part all Keto friendly snacks. My hope was that Monday morning the vodka didn't knock me out of Ketosis.

It turns out my cousins are coming over for the game with a couple other folks. With the added guests I don't feel like sitting in my kitchen making chicken wings through the entire game. I'll be ordering Pizza and Wings for delivery. On top of that, I've really been craving a good beer! Definitely not Keto friendly. I'm about 90% sure I'm going to cheat tomorrow. I lost 20 lbs in a month. YOLO, the key is to get right back on Keto the day after I cheat. I'll probably eat some pizza, drink some beers, and knock back a couple mixed drinks. Come Monday, I'll nurse a mild hangover with some Keto friendly foods then go on a hardcore fast till I'm back in Ketosis.

Monday Weigh-in A Little Disappointing.

The Monday morning weigh-in was a little disappointing. The good news is I didn't gain any weight. The bad news is, I only lost 2 lbs.  On top of that, I'm on my second week and I'm not in ketosis yet. Time to get a little more hardcore.

Usually, I fast more. I have to admit although I stayed keto friendly on foods, my intermittent fasting sucked. On top of that, I think I'm eating too many nuts and olives. Both can be high in carbs when overeaten.

Plan for this week is to get more serious. I'm making turkey soup for the family tonight, and a nice pot of bone broth for me. I think I'll be doing 24-hour bone broth fasts for today & tomorrow. Starting Wednesday, I'll try and get a good 3-day water fast in. Hopefully, that will get me in a nice state of ketosis by Saturday. 

I'm not worried. I'll just have to pick up the pace this week. Time to get a little more serious.
Week 2 - and 12 pounds lost. Ten lost in the first week, two more the following week. Let's see if I can pick up that weight loss this weekend. Ideally, I'd like to lose 60 pounds by July. That's only 10 pounds a month, and I should be able to accomplish that on keto.

Cauliflower Rice Recipe - Simple and Easy

My mother was making a rice dish that I really enjoy. For the most part, all the ingredients in it are keto with the exception of the rice. I decided to try my hand at cauliflower rice. To my surprise, it was super simple to make and tasted great!

Here's how I did it.

Ingredients:

Cauliflower
Olive oil
Butter

Break up a head of cauliflower in a colander. Then place a handful in a food processor. Chop till its the size of small pebbles. Dump in a bowl and repeat till all the cauliflower is processed. I had to do a handful at a time. It may have been my food processor. But when I filled it, the stuff at the bottom was turning into cauliflower flour, and the stuff at the top wasn't getting cut at all.

Break up cauliflower and process a handful at a time.


Once my cauliflower was processed I heated up two tablespoons of olive oil and two tablespoons of butter in a large wok on high heat.

Two tablespoons of olive oil and melt two tablespoons of butter.


Once the butter was melted I dumped my cauliflower into the wok and continuously stirred it making sure it didn't burn. I only cooked the cauliflower for about five minutes or so. It wasn't super soft, and it was a little crunchy. If you want it softer, just cook it longer. Just keep stirring so you don't burn it.

Continuously stir it in the wok till it's the desired consistency. I cooked mine a little over 5 minutes.


Now substitute any rice dish with your cauliflower rice. My mother made Lubnia which is a Lebanese dish of beef, onions, and string beans cooked in tomato sauce. It tasted awesome with the cauliflower rice!

Use it just like rice. This honestly tasted fantastic and I didn't miss real rice at all. I'd definitely eat this again! Two thumbs up for cauliflower rice!
